DAY 23 OF 100 80/10/10 -- MY 7 LAYER SALAD CREATION
I am wanting to make raw lasagna and am still considering what to put in it. I also need to get some more income generated to make things for myself and some friends. Right now I am a bit strapped for cash and need to tighten up the spending. Things have a tendency of changing fast when I get committed and I am committed to working my cleaning business full time. I'd say in 30 days I'll be near that goal. Until then I am fixing food for me and me only. Of course I share what I can with my mentoring students. LOL I can't just eat in front of them. That would be torture! LOL
So, since I can't fix my raw lasagna at this time I got creative with a salad yesterday: 7 layers of yummy goodness:
Layer 1: 1/2 pound (224 grms) of red butter leaf lettuce
Layer 2: 1 zucchini with skin: 6 5/8 ozs (191 grms) sliced in thin rounds
Layer 3: 2 tomatoes: 8 5/8 ozs (247 grms) thin horizontal slices
Layer 4: 1 ear of corn: 6 1/2 ozs (188 grms) kernals only of course!
Layer 5: 3 button mushrooms: 2 ozs (61 grms)
Layer 6: home grown alfalfa sprouts:1 7/8 ozs (55 grms) and sunflower greens 1 oz (33 grms)
Layer 7: 1 cup of my infamous Zucchini Hummus
This not only was yummy but large enough for lunch and dinner.
I started my day off with water
Followed by watermelon
10 cups of my Ambrosia Banana Citrus smoothie
2 additional bananas
Cron-o-meter stats for the day: 2248 calories 85.2% carbs/8.2% fat/6.6% protein. Wonderful!!!
159.1 mg sodium and 71.0 grms fiber.
My blogs are always about the previous day. I wake up and do my Omron Body Composition Scale stats also daily. My weight does fluctuate but is going down. Right now it is fluctuation between 108 and 109. My body fat is still fluctuating between 27 and 28%. This needs to go down to 26% and with the exercise program I'm on it will probably do so this week. My muscle % fluctuates between 27% and 28%. Of course this needs to be higher. Yesterday I exercised more than I've done in a year! I did fine. No glucose issue. I did get a bit shaky while doing a lot of stairs and hills outdoors (beautiful day!). I ate and felt fine afterwards.
I got more organic bananas at my nearby Natural Grocers for .29 per lb close out. They know me and I normally pick the too-ripe for other consumer's bananas and ask them if they can be reduced. LOL It works for them and me both!
I also purchased some very expensive organic asparagus. $6.00 per lb!!! 1 band bunch was 1 1/2 lbs and I screamed! They said I could cut the size down to 1/2 of the bunch. Next time I'm asking them to cut off the bottom 1/3rd section which is too woody for raw consumption. Then it will be a bit more affordable for the raw lasagna dish. Smart!! Why pay for something that is not edible? Most steam the vegies and can soften the thicker stalks so they are edible.
Time to get my food prepared and exercise. I'm on the 3rd day of 3 day repeat of 2 rounds and 1 stair case. Tomorrow I add a stair case. There are 3 stair cases for each lap of the mall. I'll be building up to 4 laps with 12 stair cases by the time I'm finished. That is a 65 minute exercise that is a killer! LOL
